At first glance, Cognac Fins Bois and Caroni rum may seem worlds apart, yet both share a raw intensity and a character deeply shaped by their terroir. Often overshadowed by the region’s more prestigious crus, Fins Bois offers a distinctive aromatic richness: bold notes of ripe fruit, pastry, and sometimes a rustic, almost tannic edge—rooted in its clay-limestone soils and shaped by a fast yet expressive maturation. On the other end of the spectrum, Caroni, the now-closed legendary distillery from Trinidad, delivers heavy rums marked by powerful oxidative profiles, with aromas of tar, candied fruit, warm rubber, and mocha. In their own way, both tell a story of raw matter elevated by time: Fins Bois, as the purest expression of grape and wood; Caroni, as a relic of an industrial era long gone. Together, they form an unexpected yet compelling duo—two faces of the same pursuit of authenticity.
