Swell De Spirits #18 Wonders of the World Series - Cognac Bons Bois 1999 - Domaine Pasquet - 24YO - 50.5% - 500ml -

For the 100th vintage of Swell de Spirits, here is the latest instalment in the Wonders of the World series, brought to a close with an exceptional selection from the cellars of Amy and Jean Pasquet. Deep chestnut in colour, it reveals a complex nose of raisins, raisin bread, vanilla toffee, Ceylon black tea, and a touch of neroli and rose cream. On the palate, it is rich and luxurious, with notes of spicy dark chocolate, truffles, fruity Malbec wine and roast lamb with redcurrant sauce. The finish, spiced with cardamom, nutmeg and white pepper, ends with gourmet flavours of redcurrant sauce and soft-boiled duck egg. A full-bodied, fruity and delicious cognac, both fleshy and refined.

Domaine Pasquet is the story of a passion handed down from generation to generation, a family heritage that has its roots in the Charente countryside. In 1715, Jean Trouiller was born at Chez Ferchaud and spent his life as a farmer on this land, which was then passed on without a deed of sale to Albert Brisson in 1974. It was Albert, Jean-Luc Pasquet's uncle by marriage, who appointed his nephew to inherit the vineyard. In 1970, Jean-Luc took his first steps into the world of wine during the harvest. Although a novice, he was captivated by this environment and decided, with his wife Marie-Françoise, to found the Jean-Luc Pasquet brand of Cognac in 1977. This adventure has evolved over time, driven by the family's passion, and today it is their son Jean, supported by his wife Amy, who continues this work of excellence.  The estate has now been organically farmed for almost 30 years, after Jean-Luc discovered this practice in 1994, a decision that marked a turning point in the history of the estate. The Pasquet family's commitment continues, with particular attention paid to preserving the environment, the soil and biodiversity. The 15-hectare vineyard is cultivated without chemicals, with careful management of soil fertility and natural protection of the vines. Alongside their work in the vineyards, the Pasquet family are also looking for old and rare cognacs. In 2011, they began searching for hidden treasures in the cellars of neighbouring winemakers, and this passion for rare cognacs has become an essential part of the brand's DNA. Today, Domaine Pasquet embodies authentic expertise and a forward-looking vision, with a particular emphasis on wine tourism and a growing reputation for Cognac. The family continues to work with respect for tradition, while adapting to contemporary challenges, to offer the best of their terroir through an exceptional product.
