The Roots N° 28 - Inchfad -  Single Malt Scotch Whisky 2007 - 19YO - 55.4% - 70cl -

Distilled at Loch Lomond Distillery, this Inchfad 2007 was matured for 18 years and selected after a long search for the right cask.
A few years ago, The Roots discovered a sample of this vintage that left a strong impression, but the cask was no longer available. After multiple tastings of different 2007 Inchfad releases, none reached that level—until this one. With additional years of maturation, this cask finally matches that benchmark.
The profile combines tropical fruits and peat smoke in a bold and perfectly balanced expression, showcasing Inchfad’s signature style. A powerful and refined peated single malt.

Loch Lomond Distillery produces Inchfad as a heavily peated single malt expression distilled at its versatile Highlands site, located north of Loch Lomond. The distillery is known for its unique production setup, combining traditional straight-neck pot stills with continuous stills, allowing multiple spirit styles from a single facility. Inchfad represents the heavily phenolic style within its range. The malt used is heavily peated (typically in a high phenol range by Scotch standards), resulting in a spirit rich in phenolic compounds. Distillation in straight-neck pot stills promotes a heavier, oilier spirit with increased retention of heavier congeners, including phenols and light sulphur compounds. Cut points are adjusted to balance smoky intensity with fruity expression. Fermentation is relatively long, encouraging the formation of fruity esters, which contribute tropical fruit notes alongside peat smoke. This duality is a recognised technical signature of Loch Lomond-style distillates. Maturation takes place mainly in American oak ex-bourbon casks, delivering vanillin, coconut-like wood lactones and natural sweetness. European oak casks may also be used, adding spice and tannic structure. The interaction between wood and spirit enhances complexity without suppressing the phenolic backbone. With extended ageing, Inchfad evolves from intense peat smoke into softer ashy notes, while esters develop towards ripe citrus and candied tropical fruit. The result is a technically distinctive single malt combining a heavily peated distillate, ester-driven fermentation and controlled cask maturation. Inchfad stands as a technically unique expression in Scotch whisky, offering a different interpretation of peat compared to Islay styles, with a more fruit-forward, structured and versatile profile depending on the bottling.
