At Bunnahabhain Distillery, “Moine” refers to expressions made from peated barley, in contrast to the distillery’s typically unpeated house style. The term, derived from Gaelic, relates to peat bogs and the origin of phenolic compounds. The malt used shows variable phenol levels, generally within a medium to high range for Islay. Fermentation and distillation are managed to retain heavier phenolic compounds, resulting in smoky, ashy and slightly medicinal notes. The style remains balanced, with an oily texture and a maritime influence that softens the peat intensity.

Founded in 1881 on the north-east coast of Islay, Bunnahabhain Distillery stands apart with a house style that is predominantly unpeated, unlike most Islay distilleries. Located near Port Askaig, it benefits from a strong maritime environment influencing both maturation and saline character. Production water is sourced from the mineral-rich Margadale spring, naturally filtered through the terrain. The distillery operates four copper pot stills (two wash stills and two spirit stills), producing a typically oily and structured spirit. Fermentation is relatively long, encouraging the development of fruity esters and a rich mouthfeel. The classic profile features low phenolic levels, contrasting with the heavily peated style of Islay. Maturation takes place mainly in sherry and bourbon casks, contributing sweetness, spice and depth. Traditional coastal warehouses enhance interaction with sea air during ageing. In parallel, the distillery occasionally produces peated expressions (Moine) using heavily peated malt. The result is a balanced whisky combining softness, complexity and maritime influence.
