Born from a blend of one-third Cabernet Franc eau-de-vie and two-thirds grape must, this Ratafia du Quercy—distilled in March 2023 and aged for 19 months in stainless steel tanks—reveals a pure, indulgent expression of fruit. Its rose-gold color precedes a rich nose combining marmalade, quince, ripe grapes, sweet almond, dried apricot, and sugared peach. On the palate, fresh raspberry opens the tasting before giving way to a round medley of yellow and white fruits; the profile then shifts toward drier notes of dried fruits. The finish is broad and flavorful, marked by nuts and a beautiful balance between sweetness and structure. A rare cuvée (1400 bottles), born from friendship and creativity, ideally served well chilled, with cheese, or in a cocktail.

The Domaine du Foussal Bas, located in Barguelonne-en-Quercy in the Quercy Blanc area, covers around 8.5 hectares of vines on stony, limestone-rich soils. Founded in 1983 by Pierre Bach, the family estate was taken over in 2023 by his son Raphaël Bach. The vineyard, rooted in red clay terroir, is expressed through grape varieties such as Malbec, Cabernet Franc, and Merlot. The estate produces red and rosé wines under the AOP Coteaux du Quercy and IGP Côtes du Lot designations, combining finesse, fruit, and character in an authentic, terroir-driven approach.
Swell de Spirits was founded in 2021 by Michael Barbaria. Its bottlings come from a meticulous selection of exceptional casks in collaboration with each producer, paying tribute by captivating even the most discerning palates of knowledgeable enthusiasts. With bottles as original in design as the liquid they contain, Swell de Spirits has become a key player on the independent bottling scene.
