The Whisky Jury - Secret Islay (Laphroaig) 1991 - Single Malt Scotch Whisky - 34 YO - 50.6% - 70cl -

A rare Islay single malt whisky selected by The Whisky Jury, marking a milestone in their range. Since their 5th anniversary, nearly 50 releases ago, no aged Islay whisky of this calibre had been bottled. This is also their very first 1991 vintage. Initially approached with caution, as uncommon vintages are often compared to the legendary 1989 releases, this expression ultimately exceeded all expectations. Flavour profile reveals mineral peat smoke, soft and slightly sweet, layered with notes of wax, polish and fruit. An evocative image comes to mind: a freshly polished Italian shoe crushing a mint cigarette, paired with toasted sourdough bread topped with mirabelle plum jam.

A complex yet approachable peated whisky with remarkable length and depth.

Founded in 1815 on Islay’s southern coast, Laphroaig Distillery is a benchmark for heavily peated single malt whisky. Local peat, rich in moss, lichen and seaweed, creates a distinctly medicinal and iodine-driven phenolic profile. The malt typically reaches phenol levels of around 40–45 ppm, although this evolves through distillation and maturation. Around 20% of the barley is still floor-malted on site and kiln-dried using peat fires. Fermentation times, often exceeding 55 hours, promote the development of esters and complex congeners. Distillation takes place in copper pot stills with relatively narrow necks, producing a dense, oily spirit. Cut points are managed to retain heavier phenolic compounds within the distillate. Water is sourced from Kilbride Dam, flowing through peat-rich terrain. Maturation is primarily in first-fill ex-bourbon casks, enhancing vanilla and creamy notes. The maritime climate and coastal warehouses intensify saline characteristics and overall complexity.
