They've been announcing it for a while... and now it's here! The very first Calvados from The Whisky Jury. In fact, it's a Calvados-Domfrontais, which means that at least 30% of the fruit used is pear. They were able to obtain a cask from Pacory, a producer that is still little known but of remarkable quality, with whom it was a real pleasure to work. The cask came from Perrouin. The profile? Apples, of course, but also pears! From compote and juicy “Doyenné de Comice” to crisp green apple, with a lovely polished woody note that reveals all its ripeness. Aware that their public may be new to calvados, they've done everything to make it accessible: that's why they've bottled it in a 50cl format, at a very reasonable price for a spirit that's nearly 40 years old.
